Chicken Tikka
Tikka
is a seasoning blend originally created in Britain with a strong
resemblance to Indian cooking
flavours. Easy to make and
makes a big hit at a dinner party.
Ingredients:
1 cup plain yogurt
1 bag Fiddes Payne tikka seasoning
Juice of a fresh squeezed lime
1 T butter (if using skillet)
2 T peanut oil
6 boneless chicken breasts
Salt & pepper to taste
Combine
the yogurt, seasoning, lime juice and peanut oil in a bowl.
Clean and wash chicken breast and pat dry with paper towel.
Place chicken in a shallow baking dish and coat both sides with the
yogurt blend. Let marinate,
refrigerated, for up to 4 hours. Place
butter in skillet and heat (or heat up the grill).
Shake off excess yogurt and sauté or grill for 15 to 20 minutes
until golden brown. Serve
with rice pilaf or couscous. Garnish
with lime wedges.
Tikka
Chicken with Pasta
Melt 2 Tbsp butter with 1 Tbsp olive oil
in a heavy sauté pan. Cube 1 pound of fresh, boneless chicken breast
& add to the sauté pan. Cook on medium heat 5 minutes on each side,
sprinkling with 2-3 teaspoons of Tikka seasonings and 2 turns of freshly
milled Atlantic sea salt. Serve over fresh pasta. |
