Brined Chicken Breasts
Brining is soaking meats in a
solution of salt (and often sugar) and a liquid (usually water) This
process plumps meat and gives it a cushion of moisture to sustain it
throughout cooking. Lean and mildly flavored meats with a tendency to
overcook, such as chicken turkey or pork, are perfect candidates.
To 1 quart of hot water, add ¼ c of Garlic and Herb flavored sea salt
and stir to dissolve. Add 2 lbs of boneless chicken breasts. Place in a
Ziploc bag and refrigerate for no less than 1 hr (but not more than 8
hrs). Drain and rinse thoroughly before proceeding with your favorite
recipe.
Brined
Shrimp
Pour 1 c boiling water into a
medium bowl; add ½ c Lemon flavoured
sea salt and stir until dissolved.
Add 2 quarts cold water and ice.
Add 1 lb frozen shrimp and let
stand about 45 minutes. |
