ALL ABOUT TEA
Black Tea
All tea comes from the tea bush, Camellia Sinensis. Once the tea leaves are gathered, they are withered to remove much of the natural moisture, rolled and cut by machines, beginning the natural process of fermentation, which darkens the leaves. The tea is then fired in very hot ovens, turning the leaves black. Black tea accounts for approximately 80% of the world's production. Green Tea
Green tea is unfermented tea. The leaves are heated immediately after picking, which prevents oxidation and fermentation and maintains the tea's dark green color. Throughout China, Japan and North Africa, green tea is prized for its refreshing aroma and health-giving properties. See

Decaffeinated Tea
Caffeine occurs naturally in tea leaves.
The average 5 oz. cup of tea contains 40 to 60 milligrams of caffeine, compared to 80 to 115 milligrams of caffeine for a 5 oz. cup of coffee. Our teas have had the caffeine removed using the natural CO2 process which leaves more of the flavor intact. See  Decaffeination of Tea for details.
Flavored Tea
Tea is very sensitive and will pick up the flavors of things stored nearby. Tea growers have taken advantage of this for hundreds of years by exposing fresh teas to the aromas of fruits and spices to create delightfully flavored and scented teas.
Herbal Tisanes
Often referred to as “herbal teas,” tisanes contain no part of Camellia sinensis (the tea plant). Instead they are made from various fruits, spices, dried flowers or other botanicals and are naturally caffeine free.
